Doing prawn broth using thermomix. Prawn broth is good for prawn noodles, seafood soup or for doing Hokkien mee.

Ingredients

  • 500-600 g Pork Bone

  • 20 g ginger

  • 1 tsp rice vinegar or apple cider

  • 4 cloves of garlic, smashed

  • 1 tbsp pork lard (or oil)

  • 1 tsp brown sugar

  • Prawn shells (from 500g prawns)

  • 1 star anise

  • 4 cloves

  • 1.5-1.8 litre water

Directions

  • Blench 500-600g of pork bone with 20g ginger (chopped) - 15mins / 50°C / spoon speed
  • Once done, wash the bowl and the bowl.
  • Put the bone back, add 1 tsp of rice vinegar (or apple cinder) and 1.5-1.8l of water - 90mins / 100°C / spoon
  • Smashed 4 cloves of garlic.
  • Heat up the pan with 1 tbsp of pork lard (or oil)
  • Fry the garlic for 30 secs, throw in prawn head and shells + 1 tsp of brown sugar.
  • Fry till fragrance (when colour changed to orange), add one scope of the pork bone soup stock, and mix well. Pour all back into the bowl (with the pork bone) + 1 star anise and 4 cloves.
  • Bring to boil again. 1hr / 100°C / Speed 3
  • Once done, place the simmering basket inside to drain and sieve the soup stock.
  • Seasoning suggestion
    1 tbsp of fish sauce
    1 tbsp of soya sauce
    1 tbsp of dark soya sauce
    1 tsp garlic powder
    1 tsp chicken powder
