hourMango glutinous rice is always a popular dish. This time round I decided to do mango fried rice. The mango I used is not fully ripe so it taste a little sweet and a little sour. With the taste of the spices, even my kids had 2 bowls of rice!

Ingredients
2 2 mango
Prawns / Crab meat (as needed)
20 g 20 Dried raisins (soaked)
2 stalks 2 Coriander, chopped (optional)
3 stalks 3 Spring onion, chopped (optional)
1 stalk 1 Curry leaves, only the leaves needed.
1 tbsp 1 Turmeric powder
1 tbsp 1 five spices powder
1 tbsp 1 salt
150-200 ml 150-200 water
Pork floss (as toppings)
10 pax 10 Cooked Rice
Directions
- Heat up the wok with oil, add in curry leaves and fry till fragrant.
- Add in prawns, crab sticks and mango. Stir fry all ingredients till fragrance.
- Add in cooked rice and mix well.
- Add in turmeric, 5 spice powder and salt. Mix well.
- After mixing, add a bit of water and mix well. Cover up and cook until the water dried up.
- Add in spring onion, coriander and raisins. Mix well and serve hot!
- When serve, you can add in pork floss as toppings. Enjoy!
Notes
- You can use either prawns or crab meat or both. Because I only left a little bit of prawns so I cut into small pieces and add in crab meat.
