Ingredients

  • 250 g Butter (unsalted), room temperature

  • 200 g Fine sugar

  • 340-350 g banana

  • 5 Eggs (~65g per egg)

  • Pinch of salt

  • 1 1/2 tsp Baking powder

  • 1/4 tsp Baking Soda

  • 1/4 tap vanilla extract

  • 250 g Plain flour

  • 1 banana, slice half for decoration.

Directions

  • Preheat the oven at 160°C. Grease the tin with butter / oil.
  • Mesh the banana and set aside.
    Thermomix: Speed 5, 6-8 seconds. Clear the bowl.
  • Cut the butter into cubes, add in sugar and whisk until both butter and sugar is smooth and creamy.
    Thermomix: Insert butterfly whisk, speed 3.5 for 2mins.
  • Slowly add in the eggs and whisk well.
    Thermomix: Set speed 3.5 for 3 mins and add in the eggs through the hole slowly, can continue to whisk for another 3mins. Remove butterfly whisk.
  • Add in banana mixture and mix well
    Thermomix: Scarpe down the side and add in banana mixture, speed 5 for 15 seconds.
  • Add in salt, baking powder, baking soda, vanilla extra and plain flour. Mix well.
    Thermomix: Add the above. Speed 3 for 45-50secs.
  • Pour the mixture into the 2 bread tin, half each. Knock the tin to release air and placed the half slice banana on top of the mixture.
  • Bake for 1 hr or when skewer comes out clean when inserted in the centre of the cake.

Equipment

Notes

  • If you use salted butter, there is no need for you to add salt.
  • If use 1 whole block of butter, you can use the butter wrapper to grease the tin.
  • The recipe uses 2 bread tin, you can use 1 bread tin, but the cake will be bigger in size and baking time will need to increase to 1hr 30-45mins or when skewer comes out clean when inserted in the centre of the cake.
