Baked Potato Cheese Balls are well-liked by my kids because they love cheese! I added cranberry and spring onion for more nutrients and ham for extra taste, as I did not put any seasoning. For a healthier choice, you can replace the ham with pork belly slice. Dried cranberry contains lots of antioxidants and vitamins beneficial for our body. Spring onions are an excellent source of vitamin C and calcium.

Ingredients

  • 2 Potato, cut into pieces

  • 60 g Shredded Cheddar Cheese

  • 1 stalk Spring onion

  • 1 ham

  • 30 g Dried cranberry

  • pinch Salt & pepper (Optional)

  • 600 ml water (for steaming potato, Thermomix user)

  • Coating
  • 4 tbsp flour

  • 1 egg

  • Breadcrumbs

Directions

  • Thermomix User
  • 1. Place the potato into the simmering basket. Water 600mls. 20mins / varoma / speed 2. 2. Remove and put it aside. Clear the mixing bowl
    3. Mix in cheese, spring onion, ham, and cranberry. Chop 5 secs / speed 6. Transfer the mixture to a bowl and set aside.
    4. Put in potato & seasoning. 10 secs / speed 4. Transfer to a bowl and set aside.
    5. Pre-heat the oven at 200°C.
    6. Take a small amount of mashed potato, dap a bit of flour, roll and flatten it. Place about 1/2 tsp of mixture in the center and roll into a ball.
    7. Dip the ball into the egg and then roll them in breadcrumbs.
    8. After finish doing all the balls. Place it in the oven and bake for 20mins.
    9. Serve it with tomato sauce or enjoy its on its own!
  • Non-Thermomix User
  • 1. Steam the potato till soft and mashed it with your blender.
    2. Chop spring onion, cheese, cranberry, and ham into small pieces and mix it together.
    3. Pre-heat the oven at 200°C.
    4. Take a small amount of mashed potato, dap a bit of flour, roll and flatten it. Place about 1/2 tsp of mixture in the center and roll into a ball.
    5. Dip the ball into the egg and then roll them in breadcrumbs.
    6. After finish doing all the balls. Place it in the oven and bake for 20mins.
    7. Serve it with tomato sauce or enjoy it's on its own!

Notes

  • 1. You can steam and mash the potato the night before to cut short preparation time in the morning.
  • 2. You can use a piece of bread, baked it till hard or brown, place it in the blender and blend till fine. Or use digestive biscuits.
  • 3. For a healthier choice, you can replace the ham with pork belly slice. Pan fry till golden brown and cut into pieces.
